While browsing Pinterest I came across this and thought it would make a nice treat on pancakes.
This recipe made some very fluffy pancakes. The buttermilk is essential if you want you pancakes to be light and airy.
2 cups Self-raising flour
2 tablespoons chia seeds
¼ cup castor sugar
600mL buttermilk (you can make your own by adding 1 tablespoon of vinegar or lemon to 1 cup of milk and letting it sit for five minutes),
1 tablespoon Canola oil
1 teaspoon vanilla extract
1 punnet strawberries
Place the flour, chia seeds and castor sugar into a large mixing bowl and form a well.
Add the canola oil, eggs and vanilla extract into the middle of the well. Pour in the buttermilk slowly to make sure it doesn’t go clumpy. Stir all the ingredients together until their are no lumps.
One thing I would suggest it to make your mixture a bit runnier than usual because it thickens a tad overnight.
Then cover the mixture and put the mixture into the fridge and leave them overnight for extra fluffiness.
The next morning you can make the pancakes. Slice bananas and strawberries up and melt chocolate.
Once you have made the pancakes, spread them with Nuttlea and place bananas and strawberries on top and drizzle with melted chocolate. Ta-da!
