This week I wanted to make bircher muesli so I Googled some recipes and found a delicious recipe from My New Roots.
This breakfast is so good. The strawberry sauce is AMAZING! You make everything the night before so all you have to do in the morning is assemble and eat it. The best part about it is that it is so healthy. There is no sugar or fake stuff out of a packet, just pure goodness. The chia seeds are a must as they absorb the liquid and become soft and pillowy.
The strawberry sauce can go on anything – pancakes, toast, ice-cream, etc. You can make the sauce as chunky or saucy as you like. It is really handy to have a cocktail muddler to mush up the strawberries but you could just use a potato masher or the end of a rolling-pin instead.
Here is the recipe:
Ingredients:
Bircher Muesli (per person)
⅔ cup rolled oats
1 cup milk
½ tsp lemon juice
2 tbsp chia seeds
Spiced Strawberry Sauce
1kg strawberries
Zest of ½ orange
½ tsp vanilla paste
2 cardamom pods (crushed)
1 star anise
1 black peppercorn (crushed)
1 teeny pinch salt
¼ tsp ground ginger
¼ tsp ground cinnamon
1 tbsp honey
Method:
Start by making the muesli the night before. Place all ingredients into a medium mixing bowl and stir to combine. (Multiply the recipe by the number of people you are making this for.) Cover with glad wrap and place into the fridge overnight.
To make the strawberry sauce start by washing the strawberries and cut them into halves or quarters. Place them in a large bowl.
In a separate bowl mix all the dry ingredients except for the star anise and add them to the strawberries with the rest of the ingredients. Start crushing up all the strawberries until you think it is done. Keep some chunks of strawberries to add texture.
Put your strawberry sauce into a jar and place it in the fridge. The strawberry sauce will be ready to eat after an hour in the fridge. If you don’t use it right away, that’s fine, it will keep for about a week.
The next morning, you can add some extra milk or yoghurt to your muesli, if you like. Then you are ready to assemble your muesli and strawberry sauce.
