Pancakes are yummy. These pancakes are AMAZING! They are rich and fluffy and have a deliciously spicy chai flavour. I just love them! I found this delicious recipe here.
The great thing about these pancakes is that you get flavour in every mouthful. Usually pancakes are a bit flavourless without any toppings, but these pancakes are delicious even without any topping. These pancakes do have quite a strong chai flavour so if you don’t like chai you probably won’t be too keen on these, but if you do like chai you will absolutely love them.

Dirty Chai Pancakes
1 ⅓ cup milk
2 tsp white vinegar
1 ¼ self-raising flour
Pinch of salt
1 tablespoon instant coffee
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground cardamom
¼ tsp ground nutmeg
Pinch of ground cloves
2 tbsp maple syrup
1 tbsp melted butter
1 tsp vanilla extract
Spiced Caramel Sauce
1 cup sugar
50g unsalted butter cut into cubes
½ cup thickened cream
¼ teaspoon salt
¼ teaspoon ground cinnamon
Pinch of ground ginger
Pinch of ground cardamom
Pinch of ground nutmeg
Pinch of ground cloves
First you need to make your own buttermilk. Pour the milk and vinegar in a glass measuring cup. Stir lightly and leave for 5 minutes to curdle.
To make the chai spice mix, place the instant coffee, cinnamon, ginger, cardamom, nutmeg, and cloves in to a mortar and pestle and grind until it becomes a fine power.
In a large bowl add the flour, salt, and chai spice mix. Then add the curdled milk, maple syrup, melted butter and vanilla extract. Stir to combine all the ingredients. Make sure you do not over mix the batter, as the pancakes won’t be as fluffy.
Heat large non-stick fry pan onto a medium-low heat. Brush the pan with melted butter or flavourless oil. Use a 1/3 cup measuring cup to drop the pancake batter into the pan. Cook the first side to cook for one to one and a half minutes, or until bubbles start to pop up on the surface. Flip the pancakes over and cook for another minute. Remove pancakes and keep warm. Continue until you have used up all the pancake batter.
Cover the pancakes and place into the oven on the lowest setting. Now you can make the spicy caramel sauce. Place the sugar in a medium heavy saucepan over medium heat. Stir with a wooden spoon until the sugar melts. This will take a couple of minutes.
Once the sugar has all melted start adding the butter one cube at a time. Mix until the butter is completely melted. Now slowly add in the cream and continue to mix until the sauce becomes smooth and creamy.
Remove from the heat and add the salt and chai spices and mix them into the sauce.
Transfer the caramel to a gravy boat or small jug. Take the pancakes out of the oven and place the on a plate with the spiced caramel sauce. Enjoy!
