12. Breakfast Bruschetta

This bruschetta is not your typical bruschetta you might find in a restaurant. It is just more like a fancier version of avocado and tomato on toast. But call it what you may this breakfast was deeeee-lish! I used Nigella Lawson’s recipe found here.

The great thing about thing breakfast is that it is so easy to make but tastes so yummy. The thing that makes the breakfast so good is the sourdough bread. When you fry it in a pan with oil it just makes the whole breakfast so much better.

Here is the recipe:


1 loaf of sourdough or ciabatta bread
2 medium-sized tomatoes
1 avocado
Juice of half a lime
Handful of parsley (optional)


Start off by slicing your bread into 1.5cm slices. Place them in a pan and drizzle a bit of oil on each one on both sides. Turn on the heat very low and cook until golden and slightly crunchy.

While your bread is cooking make your two toppings. First make the tomato topping by simply slicing up tomatoes in to about 1cm cubes and seasoning with salt and pepper. If you want it to be a bit fancier drizzle with balsamic vinegar and top with basil and/or bocconcini.

To make the avocado topping scoop out the avocado into a small bowl. Squeeze the lime juice onto the avocado and mix together. The lime will add flavour but most importantly, it will stop the avocado from going brown. Season with salt and pepper.

When your bread is ready top with your avocado mix or tomato. Sprinkle some parsley on the avocado. If you want you can have a spread of avocado and some tomatoes together on a bread but it is entirely up to you. Enjoy!
